We all know breakfast is the most important meal of the day but many of us are guilty of skipping it. Especially busy mums whose priority is often just making it out the house on time!
So here's a super quick and easy high protein, high energy breakfast that only takes 5 minutes to prep the day before, ready to take out the fridge and eat the following morning. It's child-friendly too meaning just one breakfast for everyone! I have this 3-4 times a week when I know I've got a busy morning ahead.
Ingredients
40g porridge oats
100g greek yoghurt (or Alpro if you're dairy-free)
200ml koko or almond milk (unsweetened)
30g berries of choice (I use frozen berries)
1 tsp Chia seeds
Method
In a Tupperware (or similar) pot, add the oats, greek yoghurt and milk.
Mix well to combine
Add the berries and chia seeds to the top
Seal with a lid or clingfilm (if no lid) and put in the fridge. The milk will soak up into the oats
Take out the fridge, grab a spoon and enjoy the following morning!
It's so simple and tasty and you can experiment with different toppings. I often add a scoop of vanilla protein powder to mine for an extra protein boost, or some chopped nuts.
